These aren’t your ordinary pancakes.
Taking inspiration from Japan’s hotcakes (which are already taller and fluffier than usual), pancakes have found their most indulgent form in souffle pancakes. These jiggly, fluffy stacks owe their uniquely airy texture to meringue-like egg whites whipped to airiness and folded carefully into the regular batter.
The result? Soft pillowy pancakes that are golden and crisp on the surface but and almost mousse-like and gooey in the middle. In other words, delicious!
