In his hometown in Lyon, France, Chef Walter Ishizuka grew up surrounded by food. His father moved to Lyon from Japan specifically to study French cooking, and it’s clear this has had a strong influence on the young chef.
Ishizuka has since made a name for himself by blending classic French fare with a delicate approach to flavor and texture derived from his Japanese heritage. Ishizuka had the privilege of working at numerous Michelin-starred restaurants in Lyon before leaving to helm Brasserie Joel in London – where he won a 2 AA Rosette guide award for his culinary skills.
At the same time, he even had time to start his own private-catering venture, My Cuisine UK, and give back to the community in the form of organising an annual charity dinner supporting Hospitality Action cooking.
So, you can imagine how exciting it was to get the chance to taste Chef Ishizuka’s signature dishes right here in KL. Specifically, at PRIME, Le Méridien Kuala Lumpur’s renowned steakhouse.
In Kuala Lumpur for the very first time, Ishizuka prepared a special 7-course dinner menu that showcased his unique French-meets-Japanese influences perfectly. As mains, we were served salmon seasoned with miso and a duck breast fillet served alongside ponzu reduction. For dessert, a yuzu tart follows a platter of three classic French cheeses.

The thing about visiting chefs is that it’s very much like going to a concert. These international stars are here to sing for a limited time only, and it’s a wonderful way to sample their cuisine without leaving the comfort of home! But just like musicians, these chefs have to perform in a wholly different stage from what they’re used to back home– a different kitchen, with a different crew, and often with different ingredients.
It could have been this adjustment period that led to the entire seven-course meal taking over three hours from start to finish. Thankfully, PRIME is ridiculously comfortable – high ceilings and high-backed chairs and a dim, cosy atmosphere quiet enough to hold conversations – and the generous wine servings keep you happily satiated between courses.
