FEMALE Tries: Authentic Italian Cuisine With a’Roma Dinings’ New Menu Collaboration With Chef Riccardo Milone

Always wanted to enjoy some authentic Italian cuisine but can’t afford to jet off to Italy?

Nestled in a corner lot in Taman Paramount, a’Roma dinings is a hidden gem that focuses on serving a “Bringing Italy to You” dining experience to its patrons. Entering its fourth year since opening in 2015, the family-run business is collaborating with renowned Italian chef Riccardo Milone to offer diners a refreshed menu with more authentic Italian flavours.

With over 30 years of culinary and restaurant consulting experience under his belt, Riccardo’s work spans across multiple continents with notable projects such as Restaurant La Truffle Noir and La Maison du Boeuf in Brussels, Ristorante Le Madri in New York and more.

From homemade pasta to signature dishes and chef’s specials, diners and certainly expect good quality and originality in every dish as the restaurant pride itself on serving and supporting the Malaysian community by championing the use of local produce and supporting local farmers.

“The secret to our Mediterranean cuisine is mostly the freshness of our product. Of course, we’re not able to get all the products directly from Italy but we’ve been exploring the markets here to see where we can get our resources from local producers. In Italy, we have a concept called “zero kilometre”. That’s the secret to our cuisine. Ingredients like vegetables are not going to taste good even if they’re from Italy because it’s not fresh. Every second an ingredient spends on the truck to be transported to the restaurant, the freshness depletes,” said Riccardo.

The new permanent a la carte menu curated from this collaboration will be making its debut mid-July 2019 and I had the opportunity to savour the dishes ahead of the launch. Here are some of my favourite picks.

Prosciutto Burrata E Carpione – Prosciutto di Parma, Burrata, Zucchini

“I may not be the biggest fan of cheese but this burrata is now one of my favourites! The cheese is beautifully balanced in taste with a delicate palate, and pairs perfectly well with the subtly sweet yet intense flavour of prosciutto and slightly acidic zucchini. There’s no such thing as ‘too much cheese’ when it comes to burrata.”

Raviolini Di Fonduta Con Uccelleto D’Agnello – Cheese ravioli, Lamb Ragu, Thyme, Tomato, White Wine

“It may look like a simple Italian dish but you’ll be surprised with the burst of flavours from the ravioli and lamb ragu. The cheese filling is not too overpowering and has a light texture that draws you in for another bite. You can also expect to taste the freshness of the ravioli that really whet the appetite.”

Tentacolo Di Polpo Arrostito – Spanish Octopus Tentacle, Avocado, Cumin Gazpacho

“As a huge seafood lover, I was definitely not disappointed with this dish. The chewy yet tender texture of the octopus was such a delight and tastes absolutely delicious with the gazpacho that boasts a refreshing and cool flavour. Along with the crumbed avocado, this dish is the ultimate summer food thanks to the light and refreshing taste.”
