Seafood Platter

Ingredients:

1 large crab
1 cob of Japanese sweeet corn, halved
200g scallops, scrubbed and de-bearded

100g clams
5 medium prawns
2 tsp coriander, chopped
a pinch of salt
freshly cracked black pepper

lemon slices, to serve

Garlic Chilli Sauce

5 cloves garlic, finely chopped
1 stalk spring onion, finely chopped
1 red chilli (deseeded)
2 tbsp oyster sauce
300 ml chicken stock

 

Method:

  1. Place crab and sweet corn in a casserole dish and cook on Steam-High for 15 minutes
  2. Add in the scallops, clams and prawns. Steam for a further 5 minutes.
  3. Arrange seafood on a platter. Season with salt and pepper, Pour lemon juice over and sprinkle coriander all around.
  4. To make the garlic chilli sauce, mix all the ingredients together and stir well to combine.
  5. Garnish with lemon slices cand serve with garlic chilli sauce on the side.
